Hoi An, on the water

The Basket Boat

The thung chai is a round bamboo coracle sealed with resin, worked by fishermen along this coast for generations. In the water-coconut channels past Cam Thanh the boatmen spin them on the spot, hard enough to soak anyone sitting still, then paddle back through the palms to lift crab traps.

Invented in Hanoi

Egg Coffee

Milk was scarce in 1940s Hanoi, so a bartender whisked egg yolk with condensed milk and floated it on black coffee. It is still served hot, in a bowl of hot water, up a staircase near the lake. Vietnam grows more coffee than any country except Brazil and drinks a serious share of it at home.

The north drizzles through winter, the centre floods in October and November, and the south takes an hour of hard rain most afternoons from May. None of it touches a cooking class, a coffee tasting, a lantern workshop or an hour of massage. Keep the wet hours indoors and save the dry ones for the water.
