Nearly two thousand islands, one shipping channel, and a very wide range of boats. These three carry the most travellers between them; the full list splits the rest by how many days you can spare.
The day boat from Hanoi
Down to the pier through the rice country, four or five hours among the karsts, a cave with a boardwalk through it, a swim off the back deck, and the long ride home in the dark.
Two days, one cabin
The bay empties when the day boats leave. Squid fishing off the rail after dinner, a quiet anchorage overnight, and a cave or a kayak channel before the tenders come back.
Lan Ha and Cat Ba instead
Same limestone, a fraction of the traffic. Lan Ha sits south of the main channel, with beaches on Cat Ba, floating fish farms and water nobody is queueing to kayak.
Hanoi is eaten standing up.
Bun cha over charcoal at noon, egg coffee up somebody’s staircase, a railway running through a lane wide enough for one bicycle. The Old Quarter rewards a guide who knows which stool to point at.
Hoi An turns its lanterns on at six.
Silk lanterns down the Hoai river, a tailor who can finish a jacket overnight, and a countryside of water-coconut palms twenty minutes out of town. The old quarter is small. The days around it are not.
Saigon runs on two wheels and a low plastic stool.
Ride pillion through District 1 after dark and eat four dinners in one evening. Then take a morning out to the tunnels and a full day down to the delta. The city works as a base as much as a stop.

Three things that only happen in Vietnam.
Beaches and temples are everywhere in Southeast Asia. A train through a residential lane, a round boat spun for sport, and coffee thickened with egg yolk belong to this country and nowhere else.
The Train Street
A working railway runs through a lane in the Old Quarter with houses close enough on both sides to touch the carriages. Cafes put stools between the rails and clear them a few minutes before the train. The lane has been closed and reopened by the authorities more than once, so the value of a guide here is knowing what the arrangement is this month.

The Basket Boat
The thung chai is a round bamboo coracle sealed with resin, worked by fishermen along this coast for generations. In the water-coconut channels past Cam Thanh the boatmen spin them on the spot, hard enough to soak anyone sitting still, then paddle back through the palms to lift crab traps.

Egg Coffee
Milk was scarce in 1940s Hanoi, so a bartender whisked egg yolk with condensed milk and floated it on black coffee. It is still served hot, in a bowl of hot water, up a staircase near the lake. Vietnam grows more coffee than any country except Brazil and drinks a serious share of it at home.

Vietnam’s rain arrives on a schedule. Book around it.
The north drizzles through winter, the centre floods in October and November, and the south takes an hour of hard rain most afternoons from May. None of it touches a cooking class, a coffee tasting, a lantern workshop or an hour of massage. Keep the wet hours indoors and save the dry ones for the water.
